Ingredients

4 cups rolled oats (not quick cook)

1 cup sliced almonds (unsalted)

1 cup cashews (roasted, unsalted) [we replace with pumpkins seeds and sunflower seeds]

1 cup shredded coconut

1/2 cup brown sugar

1/2 cup maple syrup

1/4 cup canola oil

3/4 teaspoon kosher salt

2 cups total raisins, golden raisins, dried cranberries, dried cherries, whatever combo you want

Directions

Preheat oven to 250 degrees and line two baking sheets with parchment paper.

Combine rolled oats, almonds, cashews, coconut, and brown sugar in a bowl.

In separate bowl, combine maple syrup, canola oil, and salt.

Pour maple syrup/oil/salt mixture over the dry ingredients and stir till well coated. Divide mixture between two baking sheets.

Cook for 1 hour and 15 minutes, tossing the granola ever 15 minutes so that clumps don't form. If your oven runs hot, the last 15 minutes might not be necessary. You don't want to burn the coconut. Remove from oven and let cool on pans, about 30 minutes to an hour.

Transfer to a large mixing bowl and toss with the dried fruit. Will last up to a month in an air tight container.
