Ingredients

Cake

1 1/2 cup oil

1 cup brown sugar

1 cup sugar

4 eggs

2 cups flour

2 tsp baking soda

1 tsp salt

2 tsp cinnamon

2 cups grated carrots

Frosting

1 8oz. package of Cream Cheese

1/2 sick of margarine (4 Tbl)

2 tsp. vanilla

1 lb box confectioners sugar

1 cup nuts (optional)

Cake

Pre-heat oven to 350

Blend oil and sugars. Add eggs, one at a time, beating after each.

Sift flour, measure, and mix with remaining ingredients (except carrots).

Add sugar mixture to flour mixture and mix well.

Add carrots last, and pour into flat cake panned (ungreased; man with all the oil you certainly don't need to add any more grease to this thing).

Bake 40-45 min.

Serve with cream cheese frosting.

Cream Cheese Frosting

Mix well. Ice cake when cake is cool.
